Welcome to Heritage Meat. We’re not just butchers—we’re food lovers. Every cut we offer reflects provenance, passion, and quality.
Founded by Welsh-born Huw Taylor, Heritage Meat began by supplying aged beef to top restaurants across New Zealand. Today, our artisan butchery in Taupo brings that same restaurant-quality meat to locals and visitors—making us Taupo’s destination for people who truly love food.
We work with a trusted group of farmers and suppliers who prioritise animal welfare and environmental care, sourcing premium beef, lamb, pork, and free-range chicken. We offer premium cuts, house-made sausages, additive-free bacon, and expertly crafted stuffings and marinades—designed to bring out the best in every meal.

Our Team
Jayme ElliottJayme is a fully qualified butcher with a lifelong passion for food and a gift for connecting with customers. Born and raised in Taupō, she started her butchery journey at just 12 years old. Creative, hardworking, and endlessly friendly, Jayme brings both skill and heart to the Heritage Meat team.
Leila AdamsonLeila is a talented apprentice butcher with a sharp eye for detail and a genuine passion for the craft. Born in Auckland and raised in Taupō, she was drawn to butchery by a fascination with animal anatomy. Eager to learn, Leila is driven by a desire to understand every aspect of her trade. For her, butchery is equal parts science and art, and she’s determined to master it.
Kate WebberKate manages Heritage Meat’s communications, incl. social media, while supporting Huw in the business. Growing up on a farm, she understands what goes into producing great meat. With over 25 years in primary sector communications, she’s passionate about telling the stories behind the food and celebrating Kiwi farmers.
